As soon as the shrimp is cooked through, add the spinach, stir to combine well. In a heated pot, melt butter and olive oil. Don’t rinse (this helps the sauce stick to the noodles better).

Add the heavy cream, and with the spatula deglaze the pan. Transfer the shrimp onto a plate. Giving the sauce the rich and creamy texture.

Simmer until sauce starts to thicken, 3 to 5 minutes. Add the butter, salt, cayenne pepper and lemon juice. I use shredded parmesan cheese to thicken the sauce and add a lovely cheese.

Your last step is to add the shrimps back to the skillet to reheat together with the sauce. Stir in basil and season with salt and pepper. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt.
